A vibrant green mole made from pumpkin seeds, tomatillos, and fresh herbs. This family celebration sauce delivers fresh, herbal flavors and pairs beautifully with protein-rich chicken or pork.
Toast the pumpkin seeds in a dry skillet over medium heat, stirring frequently, until puffed and lightly golden, about 4–5 minutes. Set aside to cool.
In a large pot, heat olive oil over medium heat. Sauté onion and garlic until softened and fragrant, about 4 minutes.
Add chopped tomatillos and poblano peppers. Cook for 6–8 minutes until the tomatillos release their juices and begin to soften.
Transfer sautéed vegetables, toasted pumpkin seeds, spinach, cilantro, parsley, cumin, coriander, salt, and pepper to a blender. Add 1 cup chicken broth and blend until smooth and vibrant green.
Return blended sauce to the pot. Stir in remaining chicken broth and bring to a gentle simmer over low heat. Add chicken thighs and simmer uncovered for 30 minutes, flipping occasionally. Ensure sauce maintains a light simmer, not a boil.
Remove chicken thighs, slice or shred as desired. If sauce seems too thin, simmer an additional 5–10 minutes to thicken, stirring occasionally. Serve chicken topped generously with mole verde.
