Cracklin' cornbread studded with crispy pork cracklings adds rich, smoky flavor to a Southern cornbread classic. This family-friendly bread is protein-enhanced and perfect alongside beans and greens.
Preheat oven to 425°F. While heating, place a 10-inch cast iron skillet inside to heat thoroughly.
In a large bowl, whisk together yellow cornmeal, all-purpose flour, baking powder, salt, and black pepper until well combined.
In a separate bowl, beat the eggs, then whisk in buttermilk. Pour wet mixture into the dry ingredients and mix gently until just combined; do not overmix.
Remove hot skillet from the oven and swirl in the unsalted butter until melted and sizzling, then carefully pour most of the butter into the batter, leaving about 1 tablespoon in the skillet. Stir melted butter in quickly.
Fold pork cracklings evenly into the batter, then pour the batter into the hot, buttered skillet and smooth the top. Bake for 22–25 minutes, or until golden brown and a toothpick comes out clean.
Let cool several minutes before slicing. Serve warm.
