Rou jia mo stuffs tender braised pork into a crispy flatbread for a Chinese hamburger. A high protein, family street food with fresh, bold flavor.
Cut pork shoulder into 2-inch chunks for even braising; trim excess fat but keep some for moisture.
Heat a heavy pot over medium-high and sear pork chunks until golden brown on all sides, about 3 minutes per side.
Add scallion, ginger, soy sauce, Shaoxing wine, five spice powder, sugar, and salt. Pour in enough water to cover pork. Bring to a boil, then reduce to a gentle simmer and cover.
Simmer pork for 90–120 minutes until fork-tender, turning occasionally and skimming fat for clarity.
Slice mo flatbreads horizontally; stuff each with shredded braised pork and spoon a bit of braising sauce. Top with fresh chopped scallion for crunch and serve warm.
