Chinese sausage and shiitake mushrooms cook atop rice in a clay pot until a prized crispy crust forms below. This aromatic family dish is protein-rich and full of smoky, savory depth.
Soak the dried shiitake mushrooms in warm water for 30 minutes until rehydrated, then slice thinly. Rinse the rice under cold water several times until the water runs mostly clear.
Add the rinsed rice and 2.5 cups water to a clay pot. Let the rice soak for 20 minutes before cooking.
Layer the sliced Chinese sausage and shiitake mushrooms over the soaked rice. Cover the pot with a tight-fitting lid.
Place the clay pot over medium-high heat and bring it to a gentle boil. Once simmering, reduce the heat to low and cook for 18–22 minutes until the rice is tender and most liquid is absorbed.
Increase the heat to medium for 3–5 minutes, listening for gentle crackling to develop a golden crispy crust at the bottom—be careful not to burn.
In a small bowl, combine soy sauce, dark soy sauce, oyster sauce, sugar, and sesame oil. Drizzle this sauce evenly over the cooked rice.
