Curdled milk dessert from Zamora, Michoacán, simmered in cinnamon syrup is a unique Mexican classic. This family-friendly treat is a sweet, textured, traditional confection with colonial heritage.
In a large pot, gently warm the whole milk over low heat to 100°F, stirring occasionally to avoid scorching. Do not let it boil.
Dissolve the rennet tablet in 2 tbsp of water; add this mixture and the egg yolks to the milk, stirring gently for one minute. Cover and let sit undisturbed for 30 minutes, allowing curds to form.
Once the milk has curdled, carefully cut the curds into 1-inch cubes using a long knife. Let the cubes rest in the whey for 15 minutes.
On medium heat, add canola oil, granulated sugar, cinnamon stick, and lemon zest to the pot. Bring to a gentle simmer, ensuring the syrup distributes evenly around the curds.
Simmer the mixture gently for 45–60 minutes, occasionally spooning the syrup over the curds without breaking them. Remove from heat once the curds are golden and the syrup is thick. Cool before serving.
