A colorful array of stir-fried vegetables, egg, and protein top a bowl of rice with a savory sauce. This Korean-Chinese fusion family bowl is healthy, high protein, and beautiful to serve.
Prepare all vegetables: julienne the carrot and zucchini, slice the shiitake mushrooms, rinse bean sprouts and spinach, and finely chop green onion and garlic.
Heat 1 tbsp sesame oil in a pan over medium-high. Stir-fry carrots, zucchini, mushrooms, bean sprouts, and spinach separately for 2-3 minutes each, seasoning lightly with soy sauce and black pepper. Transfer each to its own bowl to maintain color and texture.
In the same pan, add remaining sesame oil and cook the boneless chicken breast (cut in thin slices) for 4-5 minutes per side until golden and cooked through. Remove and set aside.
Fry eggs sunny-side up in a lightly oiled pan, keeping yolk soft.
Mix soy sauce, gochujang, sugar, rice vinegar, garlic, and green onion to make the savory sauce. Place a generous scoop of rice in each serving bowl, arrange stir-fried vegetables and chicken on top, add the egg, drizzle with sauce, and serve immediately.
