Rinse the dried navy beans thoroughly, then soak them in cold water overnight (at least 8 hours) for even cooking.
Drain and rinse the soaked beans. Place them in a large Dutch oven and add 6 cups of fresh water. Bring to a gentle simmer over medium heat, skimming off any foam.
Dice the salt pork, reserving a few pieces for topping later. Add most of the salt pork and the chopped onion to the pot with the simmering beans.
Add molasses, Dijon mustard, black pepper, and bay leaf. Reduce heat to low and cover. Simmer gently for 2.5–3 hours, stirring occasionally to prevent sticking.
Uncover, layer reserved salt pork on top, and bake the pot (or finish uncovered on the stovetop) for an additional 45–60 minutes, allowing the beans to thicken and the pork to become golden. Remove the bay leaf before serving.
