Cheesy chicken quesadillas stuffed with seasoned chicken and melted cheese are a quick family dinner or snack. High in protein and endlessly customizable with fresh toppings like salsa and guacamole.
1. Dice the chicken breast into bite-sized pieces and toss with cumin, chili powder, garlic powder, salt, and black pepper.
2. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken and cook for 6–8 minutes, stirring frequently, until fully cooked and lightly browned. Transfer to a plate.
3. Wipe the skillet clean, reduce heat to medium, and brush with the remaining olive oil.
4. Lay out tortillas and evenly distribute the cooked chicken and both cheeses on one half of each tortilla. Fold each tortilla to close.
5. Place filled tortillas in the skillet, pressing down slightly; cook for 2–3 minutes per side, turning once, until tortillas are golden-brown and the cheese is fully melted. Slice and serve warm.
