Shrikhand is a treasured Indian confection that brings sweetness and joy to every celebration. This traditional dessert is lovingly prepared for family festivals, religious occasions, and special moments.
Line a fine mesh sieve with a cheesecloth and place it over a bowl. Add the plain whole milk yogurt and allow it to drain in the refrigerator for 2 hours to remove excess whey.
Transfer the thickened yogurt to a mixing bowl. Add the sugar and whisk vigorously until smooth and creamy, making sure the sugar dissolves completely.
Warm 1 tablespoon of milk (optional) and gently crush the saffron strands into it for deeper color and flavor. Stir the saffron milk into the yogurt mixture along with green cardamom powder and rose water.
Fold in most of the slivered almonds and pistachios, reserving a few for topping at the end.
Chill the shrikhand for at least 30 minutes before serving. For optimal texture, stir once before portioning and garnish each serving with reserved nuts for a festive finish.
