Rasgulla Bengali is a beloved Bengali sweet crafted from fresh chhena and soaked in aromatic syrup. This iconic dessert is a highlight of family celebrations and a pride of Bengali culinary tradition.
Bring whole milk to a gentle boil over medium heat, stirring occasionally to prevent scorching at the bottom.
Add lemon juice gradually and stir gently until the milk curdles completely and chhena separates from the whey.
Immediately add ice cubes and mix to stop further cooking. Strain mixture using a cheesecloth, rinsing chhena under cold water to remove any sourness.
Drain chhena thoroughly and knead the curds with the palm of your hand for 7–10 minutes until the mixture is very smooth and non-grainy.
Divide the chhena into small equal balls (about 1 inch) and ensure they are crack-free for best texture.
In a wide, deep pan, combine sugar, water, and cardamom pods. Bring to a rolling boil over high heat.
Gently drop the chhena balls into the boiling syrup. Cover and boil for 15–18 minutes, maintaining rapid bubbles and ensuring ample syrup volume for expansion.
Turn off heat, rest covered for another 10 minutes to finish cooking the rasgullas in residual heat.
Add rose water to the syrup and let rasgullas cool to room temperature before serving.
