Jian bing egg pancakes are crispy Chinese breakfast crepes with egg and savory fillings. A protein-rich, fresh family breakfast with bold street food flavor.
In a bowl, whisk together all-purpose flour, whole wheat flour, and water until a smooth, pourable batter forms. Let rest 10 minutes.
Chop the scallions and cilantro finely; set aside for fillings.
Heat a nonstick skillet over medium heat and brush with a thin layer of oil. Pour in about 1/3 of the batter, swirling to coat the pan evenly and create a thin crepe.
Crack one egg over the crepe, spreading the yolk and white gently with the spatula to cover it. Cook until egg is set and edges start to brown, about 2 minutes.
Sprinkle scallion and cilantro over the egg, drizzle with soy sauce, hoisin sauce, and chili sauce, then lay 2 crispy wonton wrappers down the middle. Carefully fold crepe sides over the filling, press gently, and cook another 30 seconds before removing to serve.
Repeat with remaining batter, eggs, and fillings for all servings. Serve immediately for best crispiness.
