Slice each bitter melon into thick rings (about 1.5 inches), scoop out seeds, and rinse under cold water to reduce bitterness.
Mix ground pork, finely diced onion, chopped scallions, grated carrot, and egg until fully incorporated. Season with soy sauce, oyster sauce, salt, sugar, white pepper, and sesame oil.
Firmly stuff the pork mixture into the center hole of each bitter melon ring, smoothing the surface for even cooking.
Prepare a steamer with boiling water (medium-high heat) and arrange the stuffed bitter melon in a single layer on a heat-safe plate. Cover tightly with a lid.
