Fresh corn tamales from Michoacán made with sweet, ground corn and wrapped in fresh husks. These vegetarian family tamales celebrate the pure, naturally sweet flavor of seasonal corn.
Soak the fresh corn husks in warm water for at least 30 minutes until softened and pliable.
Pulse fresh corn kernels in a food processor to form a coarse paste, ensuring some texture remains for a tender tamale.
In a mixing bowl, combine the ground corn, baking powder, milk, unsalted butter, sugar, and salt; mix thoroughly until a moist, cohesive dough forms.
Lay softened corn husks flat and spoon about 1/2 cup of the dough onto the center, then fold the husks to enclose the filling tightly.
Arrange the filled tamales upright in a steamer, cover, and steam over medium heat for 60–75 minutes, checking periodically for doneness. The dough should be set and no longer sticky when tested.
