Tatte Idli is a soft, steamed South Indian rice cake made from fermented batter, naturally light and probiotic. This healthy vegetarian breakfast is low in calories, easy to digest, and a family morning staple.
Wash the parboiled rice and urad dal separately 3–4 times, then soak both along with flattened rice in enough water for at least 4 hours.
Drain the soaking water. Grind urad dal with 1/2 cup fresh water until fluffy, then grind soaked rice and poha with 3/4 cup water to a slightly coarse paste.
Combine both batters in a large bowl, mix well, and cover. Ferment for 8–10 hours in a warm spot until batter doubles and turns airy.
Once fermented, gently fold in salt. Grease flat idli plates with oil and pour batter 3/4 full into each mold; do not overmix.
Steam in a preheated steamer with boiling water for 10–12 minutes on medium heat, until a toothpick inserted comes out clean. Cool 2 minutes before unmolding and serving hot.
