Boti Kebab is a succulent Indian grilled meat preparation with aromatic spices and a melt-in-your-mouth texture. This high protein dish is perfect for carnivore diets and makes an impressive family appetizer.
Trim excess fat from the boneless lamb leg and cut into 1.5-inch cubes for even cooking.
In a mixing bowl, combine yogurt, lemon juice, grated ginger, minced garlic, and all seasoning ingredients. Mix thoroughly to create a marinade.
Add the lamb cubes to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 2 hours, ideally overnight, for maximum flavor infusion.
Preheat your grill or broiler to high heat. Thread the marinated lamb onto skewers, leaving a little space between each piece for even cooking.
Grill skewers over direct heat for 10–12 minutes, turning every 2–3 minutes for a uniform char and preventing burning. Baste with oil once midway for extra moisture.
Remove from grill when edges are slightly crisp and juices run clear. Let rest 2–3 minutes before serving to retain moisture.
