Tiny pickled quail eggs are a conversation-starter snack. Low calorie, tangy, protein-rich, and way more fun to eat than regular hard-boiled eggs.
Place quail eggs in a pot, add enough water to cover, and bring to a gentle boil over medium heat. Once boiling, reduce heat to low and simmer for 4 minutes; do not overcook, as quail eggs cook quickly.
Drain the hot water and immediately transfer eggs to a bowl of cold water to stop cooking and make peeling easier.
Carefully peel each quail egg, removing all the shell; rinse gently to remove any small bits.
In a saucepan, combine vinegar, water, sugar, salt, peppercorns, and bay leaf. Bring to a simmer over medium heat, stirring until sugar and salt dissolve completely, then remove from heat and allow to cool slightly.
Place peeled eggs in a clean glass jar and pour the cooled pickling liquid over them. Seal the jar and refrigerate for at least 24 hours before serving for best flavor and texture.
