Gajar ka halwa is a beloved winter dessert made by slow-cooking grated carrots with milk, sugar, and cardamom. This rich, aromatic Indian sweet is a cherished family tradition during the cold months.
Melt the unsalted butter in a thick-bottomed, wide pan over medium heat. Add grated carrots and sauté, stirring frequently, for 8–10 minutes until they start to soften and reduce.
Pour in the whole milk and bring it to a simmer on medium heat. Stir often and cook uncovered for 30–35 minutes, scraping the bottom to prevent sticking.
Once the milk has mostly reduced, add sugar, ground cardamom, and a pinch of salt. Continue cooking on medium-low, stirring frequently as the mixture thickens.
When the halwa is thick and glossy, add the slivered almonds and raisins. Stir well and cook for another 8–10 minutes to incorporate flavors and allow nuts to soften gently.
Turn off the heat when the mixture pulls together and leaves the sides of the pan. Let it rest uncovered for several minutes before serving warm.
