A whole fresh fish is steamed with ginger, scallions, and a drizzle of hot oil for a dish that celebrates pure, clean flavors. This healthy, high protein preparation is naturally low calorie and perfect for a dash diet or clean eats lifestyle.
Rinse the whole fish under cold water, pat dry, and score each side 2–3 times with a sharp knife. Rub both sides and the cavity with salt and white pepper.
Stuff half the ginger and a third of the scallions inside the cavity of the fish. Scatter the remaining ginger and scallions over the top and under the fish on a heatproof plate.
Place the plate in a prepared steamer set over boiling water. Steam, covered, over medium-high heat for 15–18 minutes, depending on the thickness of the fish. Fish is done when the flesh flakes easily with a fork.
Carefully remove the plate from the steamer. Drizzle the steamed fish evenly with soy sauce, rice wine, and sesame oil.
In a small pan, heat neutral oil until just smoking, then immediately pour over the fish and aromatics. Top with fresh cilantro and serve hot.
