Pav Bhaji Breakfast is a wholesome Indian breakfast dish that's quick to prepare and packed with flavor. This healthy vegetarian option is perfect for family mornings and fits a 1200 calorie or weight loss meal plan.
Peel and dice potatoes, carrots, and cauliflower. Boil potatoes, carrots, cauliflower, and green peas together until very soft, about 10 minutes on medium-high heat.
Heat 2 tbsp oil in a large skillet over medium heat. Add chopped onions and bell pepper, sauté until onions turn translucent.
Add chopped tomatoes and cook on medium heat for 4-5 minutes until tomatoes break down and mixture thickens.
Add boiled vegetables to the pan. Mash all vegetables together using a potato masher. Stir in pav bhaji masala, chili powder, turmeric, and salt. Simmer on low heat for 7-8 minutes, mixing often, until the bhaji is thick and blended.
Split pav (dinner rolls) and toast with 1 tbsp butter in a flat pan over medium heat for 2-3 minutes until golden.
Serve hot bhaji topped with chopped cilantro alongside butter-toasted pav.
