Two tortillas pressed around chicharrón in salsa with melted cheese. This street food favorite combines crispy, savory flavors into a handheld family snack full of texture.
Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Once hot, add the chicharrón pieces and cook for 2-3 minutes until slightly crisped and warmed through.
Pour the salsa verde into the skillet with chicharrón, stirring well so the pieces absorb flavor. Simmer for 3-4 minutes until the salsa thickens a bit. Season with salt and black pepper. Remove from heat.
On a separate skillet or griddle over medium heat, add a few drops of oil. Place 4 tortillas down and sprinkle with half the Oaxaca cheese. Top evenly with the warm chicharrón-salsa mixture. Add onion and a bit of cilantro to each.
Sprinkle the remaining cheese over the filling, then cover with another tortilla. Press gently to seal and cook mulitas on each side for about 2-3 minutes, pressing with a spatula, until golden brown and cheese is melted.
Transfer cooked mulitas to a plate and let rest for 1 minute before cutting. Garnish with extra cilantro and serve hot for the best texture.
