Cactus paddle soup blended into a smooth, vibrant green purée with onion and chile. This vegetarian, healthy soup is high in fiber and supports lower cholesterol and diabetic-friendly diets.
Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 3–4 minutes until translucent, stirring to prevent browning.
Add minced garlic and diced potato, sautéing for 2 minutes to develop flavor.
Stir in the poblano pepper and nopal cactus paddles. Cook, stirring frequently, for 4–5 minutes until the nopales release some moisture.
Pour in the vegetable broth, add salt and black pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20 minutes until nopales and potatoes are very tender.
Remove from heat. Add fresh cilantro, then blend the soup with an immersion blender until completely smooth and vibrant green. Adjust seasoning if needed, and serve hot.
