In a large bowl, combine all-purpose flour, sugar, salt, and instant yeast, making sure the yeast and salt do not touch directly.
Warm the milk until just lukewarm (not hot), then add to the dry ingredients with 1 egg and mix until a shaggy dough forms.
Knead the dough until smooth and elastic, about 10 minutes; incorporate softened butter gradually, kneading until fully absorbed.
Shape dough into a ball, cover, and let rise in a warm spot until doubled (about 60 minutes). Avoid overproofing to maintain softness.
Punch down the dough, divide into 6 equal pieces, then roll each into a tight ball and place on a lined baking sheet with space between.
Cover lightly and proof 40 minutes, until puffy but not collapsed. Preheat oven to 350°F during this time.
Whisk remaining egg and brush tops of buns before baking in preheated oven for 20–22 minutes, rotating tray halfway for even browning.
Cool for 15 minutes. Spread a thin layer of mayonnaise on each bun, then press pork floss onto the mayo so it adheres.
