Paneer Jalfrezi is a flavorful vegetarian paneer dish with aromatic Indian spices and rich texture. This high protein vegetarian option is perfect for family meals and supports healthy, protein-rich eating.
Cut the paneer into ½-inch thick strips and set aside. Slice onions and bell peppers into thin strips, and dice the tomatoes.
Heat 3 tbsp vegetable oil in a large frying pan on medium-high heat. Add cumin seeds and let them sizzle for 30 seconds until aromatic.
Add sliced onions, sauté for 2-3 minutes on medium heat until translucent, stirring to prevent burning.
Add ginger and garlic, sauté for 1 minute, then add all bell peppers. Stir-fry on medium-high for 3-4 minutes until just tender but still crisp.
Add tomatoes, salt, coriander powder, cumin powder, Kashmiri chili powder, and garam masala. Cook on medium heat for 4-5 minutes until tomatoes soften and release moisture.
Add paneer strips gently and mix to coat with the masala. Cook uncovered for 3-4 minutes on low heat, turning occasionally to keep paneer soft and prevent overcooking.
Check seasoning and adjust salt if needed. Serve hot, garnished with fresh herbs if desired.
