Southern almonds (apricot kernels) are blended into a smooth, fragrant sweet soup. This traditional Cantonese family dessert is light, elegant, and prized for its lung-nourishing properties.
Soak the sweet apricot kernels and glutinous rice in water for at least 4 hours or overnight for optimal softness.
Drain and rinse the soaked almonds and rice, then combine with 4 cups of fresh water in a blender. Blend on high until completely smooth, about 2–3 minutes.
Strain the almond mixture through a fine-mesh sieve or cheesecloth into a saucepan to remove solids, ensuring a silky texture.
Add granulated sugar and a pinch of salt to the strained liquid. Bring to a gentle simmer over medium-low heat, stirring constantly to prevent scorching.
Cook for 10–15 minutes, stirring frequently, until the soup thickens to a creamy consistency and the raw almond flavor mellows. Serve warm or slightly chilled.
