Sweet, aromatic, and deeply satisfying, Chum Chum is a beloved Indian dessert with centuries of tradition. This family celebration staple adds sweetness to festivals, weddings, and everyday moments of joy.
Heat whole milk in a heavy-bottomed pot over medium heat, stirring occasionally to prevent sticking, until it just comes to a boil.
Reduce heat to low and slowly add lemon juice while gently stirring until the milk curdles completely and whey separates.
Pour the curds into a cheesecloth-lined sieve, rinse under cold water to remove the lemon flavor, then press gently to drain excess moisture for about 20 minutes.
Transfer the chenna (curds) to a plate, add all-purpose flour, and knead with your palm for 5–7 minutes until smooth and soft.
Divide the dough into equal portions and shape into oval logs, aiming for uniform size for even cooking.
In a wide saucepan, bring water and sugar to a rolling boil over high heat, then gently drop in the shaped chum chum pieces.
Cover and simmer on medium heat for 15–18 minutes, turning once or twice to ensure even puffing.
Let the cooked chum chum cool for 20 minutes in the syrup, then transfer carefully onto a plate.
Mix ricotta cheese, cardamom powder, and rose water to create the filling; slit each chum chum lengthwise and fill with the mixture.
Garnish with chopped pistachios and chill for at least 1 hour before serving for best texture and flavor.
