Crispy pork cutlet simmered with egg over rice — katsudon is what Japanese people eat when they need comfort after a hard day. High calorie and worth it.
1. Pound the pork loin chops to ½-inch thickness, then season lightly with salt and pepper.
2. Dredge each chop in flour, dip in beaten egg, then coat thoroughly with panko breadcrumbs.
3. Heat vegetable oil in a deep skillet to 350°F. Fry the breaded pork over medium-high heat for 3–4 minutes per side until golden and crisp. Drain on paper towels.
4. In a separate pan, sauté sliced onion over medium heat until translucent, about 3 minutes. Add dashi stock, soy sauce, mirin, and sugar. Simmer for 4 minutes.
5. Slice the fried pork cutlet and add to the simmering sauce. Pour the remaining beaten egg gently around the pan. Cover and cook just until the egg is barely set, 1–2 minutes.
6. To serve, spoon cooked white rice into bowls. Place the saucy pork and onions on top. Garnish if desired, and serve hot immediately.
