I'm convinced this is what cookies were always meant to be. A thick, warm semi-sweet chocolate chip cookie baked until perfectly gooey in the center, topped with a generous scoop of vanilla bean mousse and a drizzle of melted semi-sweet chocolate.
Cream the butter, cream cheese, brown sugar, and granulated sugar together for 3–5 minutes until very light and fluffy — this achieves Crumbl's signature tender, thick crumb.
Add eggs and vanilla extract, mixing until combined. Sift together bread flour, all-purpose flour, cornstarch, baking soda, and salt, then stir into wet ingredients until barely combined. Fold in chocolate chips gently.
Scoop large portions of dough (about 1/2 cup each) onto a parchment-lined sheet, shaping 8 oversized rounds. Chill the shaped dough for at least 1 hour — copycat tip: this keeps cookies thick and gooey, prevents spreading like store-bought versions.
Preheat oven to 375°F. Place dough balls into greased oven-safe mini skillets (or form a single large skillet for sharing). Bake for 16–18 minutes until edges are set but centers are soft and underbaked — Crumbl cookies are meant to stay gooey.
While cookies bake, whip the heavy cream, vanilla bean paste, and powdered sugar on high speed until mousse-like, about 2 minutes. Cool cookies just until barely warm, then top each with a generous scoop of vanilla bean mousse and drizzle melted semi-sweet chocolate for the classic finish.
