Enjoy the homestyle comfort of Kathal Sabzi, a classic Indian vegetable curry with aromatic spicing. This nutritious vegetarian dish is naturally healthy, family-friendly, and fits a calorie-conscious lifestyle.
Heat vegetable oil in a heavy-bottomed pan over medium heat. Once the oil shimmers, add cumin seeds and let them sizzle for 10–15 seconds until aromatic.
Add finely chopped onion, sauté for 6–7 minutes on medium heat until translucent and lightly golden, stirring occasionally to prevent burning.
Stir in ginger-garlic paste; cook for 1 minute until raw aroma vanishes, then add chopped tomato. Cook on medium-low for 6 minutes, stirring and lightly mashing, until tomatoes break down and oil separates.
Mix in turmeric powder, coriander powder, red chili powder, and salt. Add jackfruit pieces and potato. Sauté everything on medium-high for 3 minutes to coat with the spice mixture.
Pour in water, bring to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes until the jackfruit and potatoes are fork-tender. Add green peas in the last 5 minutes of simmering.
Uncover, sprinkle garam masala and half the chopped cilantro. Stir well and let it cook uncovered for 2–3 minutes on medium heat to thicken as desired.
Taste and adjust salt if needed. Turn off the heat and garnish with remaining cilantro before serving.
