Toasted bolillos topped with smoky chipotle chicken tinga, beans, and melted cheese. These protein-packed open-faced sandwiches make a quick, satisfying family lunch or dinner.
Preheat your oven to 400°F. Slice the bolillos in half lengthwise and place them cut-side up on a baking sheet.
Heat olive oil in a skillet over medium heat. Add chopped onion and cook for 3–4 minutes until translucent, then stir in garlic and sauté for 1 minute more.
Add shredded chicken, chipotle peppers, tomato sauce, salt, and pepper. Stir thoroughly and simmer for 5–6 minutes until chicken is coated and sauce thickens.
Spread refried beans evenly over each bolillo half, then layer the chipotle chicken tinga mixture on top. Sprinkle generously with shredded cheese.
Bake assembled molletes in the oven for 8–10 minutes, or until the cheese is fully melted and bubbling and bread edges are crisp. Serve hot.
