Slow-baked Boston baked beans simmered with molasses and salt pork are a sweet, savory New England tradition. This family-friendly side dish offers plant protein and pairs perfectly with cornbread and franks.
Soak the dried navy beans overnight in a large bowl covered with water by 2 inches to soften; drain and rinse before cooking.
Preheat your oven to 300°F (150°C). Place the drained beans in a heavy Dutch oven or large ovenproof pot and add enough fresh water to cover by 1 inch.
Bring the beans to a gentle simmer over medium heat on the stovetop. Skim off any foam, then cook uncovered for 30 minutes.
Add the quartered yellow onion, cut salt pork (reserving a few pieces for topping), molasses, brown sugar, Dijon mustard, kosher salt, and black pepper to the pot. Stir well to blend seasonings.
Nestle the reserved salt pork on top. Cover tightly and bake for 5–6 hours, stirring every 1–2 hours and checking water level—add just enough hot water if beans seem dry.
