Silky, aromatic, and comforting, Sevai Kheer is a traditional Indian milk-based dessert loved by all ages. This family favorite is a festive essential at Diwali, Eid, and special gatherings.
Heat ghee in a heavy-bottomed pan over medium heat; add chopped nuts and raisins, sauté until golden, then set aside.
In the same pan, add vermicelli and roast on medium-low heat for 2-3 minutes, stirring constantly until fragrant and lightly golden.
Pour in whole milk and bring to a gentle boil, stirring occasionally; reduce to a simmer and cook for 10 minutes.
Add sweetened condensed milk and sugar, mixing thoroughly; continue to simmer for another 10 minutes, stirring frequently to prevent scorching.
Stir in cardamom powder, saffron strands, and half of the prepared nuts and raisins. Simmer 2-3 more minutes, then turn off the heat. Garnish the kheer with remaining nuts and serve warm or chilled.
