Slice eggplants into 1/3-inch thick rounds and lightly sprinkle both sides with salt. Let rest for 10 minutes to draw out excess moisture.
Heat 2 tbsp of vegetable oil in a nonstick skillet over medium-high heat. Pat eggplant slices dry and fry in batches until golden brown on both sides (about 3-4 minutes per side). Set aside on a plate.
In the same pan, add the remaining 1 tbsp oil and cumin seeds. Let them sizzle on medium heat for about 30 seconds until aromatic.
Add chopped onions and sauté until translucent, then add turmeric powder, coriander powder, and red chili powder. Stir and cook for 1 minute before adding chopped tomatoes. Cook on low-medium heat until the tomatoes turn soft and the oil begins to separate (about 5 minutes).
Reduce heat to low and gently mix in whisked yogurt, stirring constantly to prevent curdling. Layer the fried eggplant slices over the spiced yogurt sauce. Simmer uncovered on low heat for another 5 minutes for the flavors to combine. Garnish with fresh cilantro before serving.
