Cut the corn tortillas into triangles. Heat vegetable oil in a skillet over medium-high until shimmering but not smoking.
Fry tortilla pieces in batches, turning occasionally, until golden and crisp, about 2–3 minutes per batch. Drain on paper towels.
Meanwhile, clean and stem the guajillo chiles. In a saucepan over medium heat, simmer tomatoes, onion, garlic, and chiles with chicken broth for 10 minutes until softened.
Transfer the cooked vegetables and broth to a blender. Blend until completely smooth, then season with salt and black pepper.
Pour the red sauce into a skillet and simmer over medium-low heat until slightly thickened, about 5 minutes. Add the fried tortilla chips, tossing quickly to coat evenly, just until chips start to absorb sauce but remain a bit crunchy.
Transfer the sauced chips to plates and immediately drizzle with crema and sprinkle with queso fresco. Serve hot.
