Whole braised duck in a rich soy-based sauce is a protein-packed celebration centerpiece. A family banquet dish with tender meat and fresh aromatics.
Thoroughly clean and pat the whole duck dry. Prick the skin lightly with a fork, especially on the breast and thighs, to help render the fat during cooking.
Heat a large Dutch oven or deep pot over medium heat. Sear the duck on all sides until the skin is golden and much of the fat is rendered out, about 6–8 minutes per side. Carefully remove excess fat as needed.
Push the duck to one side or remove temporarily. Add the ginger slices, scallions (use 4, cut in half), and garlic cloves to the rendered fat. Sauté over medium-low heat until aromatic, about 3 minutes.
Return the duck to the center. Add soy sauce, dark soy sauce, Shaoxing wine, rock sugar, star anise, cinnamon stick, black peppercorns, and water. Bring to a gentle simmer over medium-high heat.
Reduce heat to low, cover tightly, and braise for 2.5–3 hours, occasionally basting duck with the sauce and rotating halfway. Remove the lid for the last 20 minutes to slightly reduce and thicken the sauce. Let the duck rest for 15 minutes before carving. Garnish with remaining scallions to serve.
