Hearty laba congee with eight treasures of grains, nuts, and dried fruits is a festive winter porridge. A healthy, vegetarian family tradition with fresh, nourishing ingredients.
Rinse all grains, beans, and nuts separately until water runs mostly clear. Soak red beans and lotus seeds in water for at least 4 hours or overnight for best softness.
In a large stockpot, combine all grains, soaked beans, lotus seeds, peanuts, and 10 cups of water. Bring to a rolling boil over high heat, skimming any foam.
Once boiling, reduce heat to low and simmer uncovered for 60 minutes, stirring occasionally to prevent sticking and ensure even texture.
Add dried longan, jujube, and walnut halves. Simmer another 30-40 minutes, stirring gently and adding 1–2 cups hot water if porridge thickens excessively.
Stir in rock sugar and salt. Simmer for a final 5–10 minutes, tasting and adjusting seasoning as needed. Serve hot, optionally garnished with extra dried fruit or nuts.
