Wide, silky rice noodles are wok-tossed with tender beef slices, bean sprouts, and chives over extreme heat. This Cantonese family classic showcases wok hei (breath of the wok) and is a satisfying, protein-rich meal.
Slice beef flank steak thinly across the grain and marinate with 1 tbsp soy sauce, 1 tsp shaoxing wine, and a pinch of white pepper for at least 15 minutes.
Gently separate the wide rice noodles so they are loose and ready to cook. Keep them covered to prevent drying.
Heat a wok over high flame until smoking. Add 2 tbsp oil and rapidly stir-fry the beef slices in a single layer for about 45 seconds until 80% cooked, then remove and set aside.
Add 1 tbsp oil to the hot wok, then quickly toss in sliced onions and Chinese chives, stir-frying just until fragrant and starting to soften.
Immediately add the rice noodles, returning the beef to the wok. Drizzle with remaining soy sauce, dark soy sauce, oyster sauce, sugar, and toss with high heat for 1–2 minutes to ensure the noodles pick up the wok hei.
Add bean sprouts last, tossing gently for 30 seconds so they stay crisp. Taste and adjust seasoning if necessary. Serve hot.
