A loaded bacon and egg breakfast burrito wraps crispy bacon, scrambled eggs, and cheese in a warm tortilla. This high protein, family-friendly grab-and-go breakfast is perfect for busy mornings.
Lay bacon strips in a cold skillet, then place over medium heat. Cook, turning occasionally, until bacon is crisp and golden brown, about 8–10 minutes. Transfer to a paper towel–lined plate to drain.
In a medium bowl, whisk together eggs, milk, salt, and black pepper until well combined for fluffier scrambled eggs.
Melt butter over medium-low heat in a nonstick skillet. Add egg mixture and cook, stirring gently with a spatula, until eggs are just set and still soft, 3–4 minutes. Remove immediately from heat to avoid overcooking.
Warm tortillas in a dry skillet over medium heat for 20 seconds per side, until pliable and lightly toasted.
Assemble each burrito: Lay out one tortilla, sprinkle 1/4 cup cheese in the center, evenly spread 1/4 of the bacon and 1/4 of the eggs over the cheese. Roll up burrito, folding in sides tightly for a firm wrap.
If desired, place assembled burritos seam-side down on the skillet over medium heat for 1–2 minutes to seal and crisp the outside.
