Crispy on the outside and flavorful within, Lauki Paratha is a beloved Indian stuffed flatbread. This filling vegetarian dish is perfect for family breakfasts and pairs beautifully with yogurt and pickle.
In a large bowl, combine grated lauki with salt. Let it sit for 10 minutes, then squeeze gently to remove excess moisture.
Add whole wheat flour, carom seeds, turmeric, red chili powder, cilantro, and yogurt to the lauki. Mix until just combined, adding a tablespoon of water only if necessary to bring the dough together.
Knead the dough for 4–5 minutes until smooth and lightly sticky. Drizzle 1 tbsp oil over the dough, cover, and let it rest for 15 minutes.
Divide dough into 8 equal balls. Roll each into a disc, dusting with flour as needed to prevent sticking. Aim for circles about 6 inches wide.
Heat a skillet (tava or nonstick pan) over medium heat. Place one rolled paratha onto the hot surface. Cook for 40 seconds, then flip, brush with oil, and cook another 40–60 seconds per side. Repeat for all parathas, adjusting heat to avoid burning while achieving crisp, golden spots.
