Grandma's custard-filled tart topped with pine nuts and powdered sugar is pure nostalgia. This classic mediterranean dessert is a family tradition across Tuscany.
Prepare the pastry dough: Combine flour, butter, 0.5 cup sugar, 1 egg, lemon zest, and a pinch of salt in a bowl. Mix until crumbly, then knead gently just until smooth. Chill the dough for at least 30 minutes to firm up.
Make the custard filling: In a saucepan, whisk together the milk, remaining sugar, cornstarch, 2 eggs, vanilla extract, and another pinch of salt. Cook over medium heat, stirring constantly, until the custard thickens and begins to bubble softly. Remove from heat and let cool to room temperature.
Roll out two-thirds of the chilled dough and line a 9-inch tart pan, pressing up the sides. Prick the base with a fork, then spread the cooled custard evenly inside.
Roll out the remaining dough for the tart’s top. Carefully place it over the custard, sealing the edges. Sprinkle pine nuts generously over the surface.
