Cuttlefish braised with sweet peas is a classic Roman spring combination. This high protein mediterranean dish is a fresh, healthy family dinner that's naturally low in fat and calories.
Heat 2 tbsp extra virgin olive oil in a large sauté pan over medium heat. Add finely chopped onion and cook, stirring occasionally, until soft and translucent, about 5 minutes.
Add minced garlic and stir for 1 minute, letting the aroma release but ensuring it does not brown.
Increase the heat to medium-high and add cleaned, cuttlefish pieces. Sauté for 2–3 minutes until the surface firms up but do not overcook.
Add crushed tomatoes and season with sea salt and black pepper. Stir, bring to a gentle simmer, cover, and braise on low heat for 20 minutes.
Add fresh peas, recover, and continue to cook on gentle heat for another 10 minutes. Remove from heat, stir in chopped parsley, and rest for 2 minutes before serving.
