Paneer Masala Dosa is a crispy South Indian crepe made from fermented rice and lentil batter, served with chutney and sambhar. This popular vegetarian dish is naturally high in protein from fermentation and a beloved family breakfast.
Prepare the potato by boiling until fork tender, then peel and roughly mash; set aside.
Heat 1 tbsp oil in a skillet over medium heat; add mustard seeds, cumin seeds, and allow to splutter. Add curry leaves, chopped onion, and green chili, sautéing until onions are translucent.
Add turmeric, 0.5 tsp salt, and red chili powder to the skillet; stir in the mashed potato and crumbled paneer. Mix well and cook for 3 minutes, then keep the filling warm.
Heat a nonstick griddle or large flat skillet over medium-high heat; lightly grease with remaining oil.
Pour 1/2 cup dosa batter onto the hot griddle, spreading evenly in a circular motion with the back of a ladle for a thin crepe. Drizzle edges with a few drops of oil.
Cook until the bottom turns golden and crisp (about 2–3 minutes), then spoon paneer masala filling onto the center. Fold the dosa over the filling and serve hot, repeating for remaining portions.
