Pan-fried salmon cakes with a dollop of aioli are a crispy low carb dinner. Great way to use canned or leftover salmon — budget-friendly and delicious.
Drain canned salmon thoroughly and flake with a fork in a medium mixing bowl.
Add eggs, almond flour, chopped green onions, lemon zest, salt, and black pepper to the bowl. Mix until just combined; avoid overmixing for best texture.
Shape salmon mixture into 8 small patties, pressing firmly to hold together.
Heat olive oil in a large skillet on medium heat. Once shimmering, carefully add patties and fry 3–4 minutes per side, adjusting heat to prevent burning.
While cakes cook, make the aioli by mixing mayonnaise, minced garlic, and lemon juice in a bowl. Chill until ready to serve.
Remove salmon cakes from skillet onto a paper towel to drain excess oil. Serve with a generous dollop of the chilled aioli.
