In a separate bowl, whisk together unsweetened applesauce, egg, vanilla extract, cinnamon, and sea salt until smooth and thoroughly combined.
Pour the wet mixture over the dry oats mix and stir thoroughly, ensuring all oats are well coated and the mixture holds together.
Press the mixture firmly and evenly into the prepared pan, making sure to pack down to prevent crumbling after baking.
Bake for 25–30 minutes at 350°F until the bars are golden brown and set. Let cool completely in the pan for at least 1 hour before slicing into 8 bars.
