Poha is a light, flavorful flattened rice breakfast dish tempered with peanuts, curry leaves, and turmeric. This quick vegetarian meal is naturally gluten-free, healthy, and perfect for weight loss and family mornings.
Rinse 2 cups of flattened rice in a colander under running water for 15-20 seconds, then set aside to drain completely.
Heat 2 tbsp vegetable oil in a large skillet over medium heat. Add 1 tsp mustard seeds and let them pop for aroma, about 30 seconds.
Add 0.33 cup peanuts and fry on medium-low until golden, then stir in 1 medium diced onion, 1 small diced potato, 8 curry leaves, and 1 chopped green chili. Sauté for 4-5 minutes until onions are soft.
Mix in 0.5 tsp turmeric powder and 0.5 tsp sugar. Cook for another minute, stirring constantly so the spices don't burn.
Add the drained poha to the pan and sprinkle with 1 tsp salt. Cook gently over low heat, tossing to combine for 3-4 minutes until heated through but not mushy.
Turn off the heat, squeeze juice from 0.5 lemon over the poha, and mix well. Rest for 2 minutes before serving for best texture.
