Place the beef shank and chickpeas in a large pot with about 10 cups of water. Bring to a boil over medium-high heat, then skim off the foam that rises for the first 15 minutes.
Add garlic cloves, bay leaves, and salt. Reduce heat to a gentle simmer, cover, and cook for 1 hour to develop a rich clear broth.
Add chopped carrots, potatoes, corn on the cob, chayote squash, and cabbage. Simmer for another 35 minutes until vegetables are almost tender.
Add plantain and pear to the pot, stirring gently. Continue simmering for 15 minutes, ensuring fruit keeps its shape and isn't overcooked.
Just before serving, stir in chopped fresh cilantro and black pepper. Taste and adjust seasoning. Serve hot in bowls with broth and generous chunks of meat, vegetables, and fruit.
