Slow-braised short ribs over rice with all the juices pooling underneath. This high calorie rice lunch is fork-tender luxury on a plate.
Preheat oven to 325°F. Pat short ribs dry and season with salt and pepper.
Heat olive oil in a heavy Dutch oven over medium-high heat. Sear short ribs on all sides until browned, about 3-4 minutes per side. Set aside.
In the same pot, sauté onion, carrots, celery, and garlic for 5 minutes until softened, using medium heat.
Return short ribs to the pot, add beef broth, soy sauce, bay leaves, and cover. Braise in oven for 2.5 to 3 hours until ribs are fork-tender.
Meanwhile, cook rice separately as per package instructions. Plate rice, remove ribs and discard bay leaves, then ladle the ribs and braising juices over the rice to serve.
