Prepare the kulcha dough by combining all-purpose flour, yogurt, baking powder, a pinch of salt, and enough water to form a soft, smooth dough. Cover and rest for 30 minutes.
To cook chole, heat 1 tablespoon oil in a skillet over medium heat. Add cumin seeds until they sizzle, then stir in chopped onions and sauté until light golden.
Add ginger garlic paste and sauté for 1 minute, followed by chopped tomatoes and diced potato. Cook for 4–5 minutes until tomatoes soften.
Add canned chickpeas, chole masala, coriander powder, garam masala, and ½ teaspoon salt. Mix well, add 1 cup water, and simmer uncovered over medium-low heat for 20 minutes, stirring occasionally to prevent sticking.
Divide dough into 4 balls, roll into oval shapes, and cook each kulcha on a hot skillet: 1 minute per side until golden brown spots appear, brushing lightly with oil before flipping.
Finish chole with fresh lemon juice and chopped cilantro. Serve chole hot with kulchas and extra chopped onion if desired.
