Succulent Cantonese lobster stir-fried with ginger and scallion is a high protein celebration dish. A fresh, family feast centerpiece with clean, elegant flavor.
Dispatch and clean the live lobster, then chop it into 2-inch pieces. Crack the claws for even cooking.
Pat lobster dry and toss with egg white and cornstarch to coat lightly and evenly.
Heat a large wok over high heat until just smoking, then add half the neutral oil. Sear lobster pieces in a single layer for 3–4 minutes, turning once for color, then remove from wok.
Add remaining oil to the wok with sliced ginger and scallion whites. Stir-fry for 1 minute until fragrant, controlling heat to avoid browning.
Return lobster to the wok. Pour in Shaoxing wine, light soy sauce, sea salt, white pepper, and sugar. Stir-fry over high heat, then add scallion greens and toss for 2–3 minutes until sauce coats lobster and shells turn vivid red.
Transfer immediately to a platter, serve hot and garnish with additional scallion if desired.
