Slow-braised pot roast with tender carrots, potatoes, and onions in rich gravy is a Sunday family dinner tradition. This high protein, carnivore-worthy meal fills the house with incredible aromas.
Pat the beef chuck roast dry and season generously with kosher salt and black pepper on all sides.
Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast until deeply browned on all sides, about 3-4 minutes per side. Transfer the beef to a plate.
Add sliced onions, chopped carrots, and celery to the pot. Sauté for about 5 minutes, stirring to release browned bits, until vegetables are slightly softened.
Return the roast to the pot and add beef broth, garlic cloves, fresh thyme, bay leaves, and potatoes. Bring to a gentle simmer over medium heat.
Cover tightly and transfer to a 300°F oven. Braise for 3 hours or until the beef is fork-tender and vegetables are soft, basting once every hour.
Remove thyme and bay leaves. Rest roast for 10 minutes, then slice or shred beef and serve with vegetables and rich pan gravy.
