Phulka is a traditional Indian flatbread that's a healthy, whole-grain staple of everyday meals. This simple vegetarian bread is low in calories and the perfect family dinner accompaniment to any curry.
In a large bowl, combine 2 cups whole wheat flour and 0.5 tsp salt. Gradually add 0.75 cup of water while mixing to form a soft, non-sticky dough.
Drizzle 1 tsp oil over the dough and knead for at least 6-8 minutes until it becomes smooth and elastic. Cover and let the dough rest for 15 minutes.
Divide the dough into 8 equal balls. Roll each ball into a thin, even circle about 6 inches in diameter, lightly dusting with flour as needed to prevent sticking.
Preheat a heavy skillet or tawa over medium-high heat. Place one rolled disc onto the hot skillet; cook for about 30 seconds until small bubbles appear, then flip.
Cook the other side for 30 seconds, pressing gently with a clean cloth. Using tongs, place the phulka directly over the gas flame for a few seconds until it puffs up. Remove from heat and keep warm in a cloth-lined container. Repeat for each phulka.
